Muffins
These delicious blueberry muffins are moist, fluffy, and bursting with juicy blueberries.
Ingredients - Serves 12
- Turbinado sugar (optional, for topping) - 2 tablespoons
- Fresh blueberries - 1 1/2 cups
- Vanilla extract - 1 teaspoon
- Egg - 1
- Vegetable oil - 1/2 cup
- Milk - 1 cup
- Salt - 1/4 teaspoon
- Baking powder - 2 teaspoons
- Granulated sugar - 3/4 cup
- All-purpose flour - 2 cups
Let's Get Started
- Preheat the oven to 375°F and line a muffin tin with paper liners.
- In a large bowl, whisk together the flour, sugar, baking powder, and salt.
- In a separate bowl, whisk together the milk, vegetable oil, egg, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and stir until just combined.
- Gently fold in the blueberries.
- Scoop the batter into the prepared muffin tin, filling each cup about 2/3 full.
- If desired, sprinkle the tops of the muffins with turbinado sugar for added crunch.
- Bake for 20-25 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
- Allow the muffins to cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
