Morel Mushroom Risotto

Ingredients - Serves 4
- Salt and pepper - To taste
- Garlic - 2 cloves, minced
- Onion - 1 small, finely chopped
- Olive oil - 1 tablespoon
- Unsalted butter - 2 tablespoons
- Parmesan cheese - 1/2 cup, grated
- Dry white wine - 1/2 cup
- Chicken broth - 4 cups
- Arborio rice - 1 cup
- Morel mushrooms - 1 cup, cleaned and sliced
Let's Get Started
- Heat the olive oil and butter in a large pan over medium heat.
- Add the onion and garlic, cook until the onion is translucent.
- Add the morel mushrooms and cook until they are soft.
- Add the Arborio rice to the pan and stir to coat in the oil and butter.
- Pour in the white wine and stir until it is fully absorbed by the rice.
- Begin adding the chicken broth, one cup at a time, stirring constantly and allowing each cup to be absorbed before adding the next.
- Continue this process until all the broth has been added and the rice is creamy and al dente.
- Stir in the Parmesan cheese and season with salt and pepper to taste.
- Serve the risotto hot, garnished with additional Parmesan cheese if desired.
