Morel Mushroom Risotto

Ingredients - Serves 4

Let's Get Started

  1. Heat the olive oil and butter in a large pan over medium heat.
  2. Add the onion and garlic, cook until the onion is translucent.
  3. Add the morel mushrooms and cook until they are soft.
  4. Add the Arborio rice to the pan and stir to coat in the oil and butter.
  5. Pour in the white wine and stir until it is fully absorbed by the rice.
  6. Begin adding the chicken broth, one cup at a time, stirring constantly and allowing each cup to be absorbed before adding the next.
  7. Continue this process until all the broth has been added and the rice is creamy and al dente.
  8. Stir in the Parmesan cheese and season with salt and pepper to taste.
  9. Serve the risotto hot, garnished with additional Parmesan cheese if desired.
