Moi Moi
Moi Moi is a traditional Nigerian dish made from black-eyed peas and spices. It is a delicious and nutritious steamed bean pudding.
Ingredients - Serves 6
- Water - 1 cup
- Salt - To taste
- Stock cube - 1
- Crayfish - 2 tablespoons, ground
- Vegetable oil - 1/4 cup
- Scotch bonnet pepper - 1, finely chopped
- Red bell pepper - 1, finely chopped
- Onion - 1 medium, finely chopped
- Black-eyed peas - 2 cups, soaked overnight
Let's Get Started
- Rinse the soaked black-eyed peas and remove the skins.
- In a blender, blend the black-eyed peas with the chopped onion, red bell pepper, and scotch bonnet pepper until smooth.
- Transfer the blended mixture to a bowl and add the vegetable oil, crayfish, stock cube, and salt. Mix well.
- Gradually add water to the mixture while stirring until you achieve a smooth, pourable consistency.
- Grease a baking dish or individual ramekins with oil.
- Pour the moi moi mixture into the greased dish(es).
- Cover the dish(es) with aluminum foil.
- Place the dish(es) in a steamer or a large pot with a steamer basket.
- Steam the moi moi for about 45-60 minutes, or until firm and cooked through.
- Remove from the steamer and let it cool slightly before serving.
- Serve warm as an appetizer or side dish.
