Mint and Pea Pilaf with Basmati Rice
This flavorful pilaf combines fragrant basmati rice with fresh mint and sweet peas.
Ingredients - Serves 4
- Black pepper - 1/4 teaspoon
- Salt - 1/2 teaspoon
- Olive oil - 2 tablespoons
- Vegetable broth - 2 cups
- Garlic - 2 cloves, minced
- Onion - 1 small, finely chopped
- Fresh mint leaves - 1/4 cup, chopped
- Frozen peas - 1 cup
- Basmati rice - 1 cup
Let's Get Started
- Rinse the basmati rice under cold water until the water runs clear. Drain well.
- Heat olive oil in a large saucepan over medium heat. Add the chopped onion and minced garlic. Sauté until the onion is translucent, about 5 minutes.
- Add the drained basmati rice to the saucepan and stir to coat the rice with the onion and garlic mixture.
- Pour in the vegetable broth and add salt and black pepper. Bring to a boil, then reduce the heat to low, cover, and simmer for 10 minutes.
- After 10 minutes, add the frozen peas to the saucepan. Cover and continue to simmer for another 5 minutes, or until the rice is tender and the peas are heated through.
- Remove the saucepan from heat and let it sit, covered, for 5 minutes to allow the flavors to meld.
- Fluff the pilaf with a fork and stir in the chopped fresh mint leaves.
- Serve hot as a side dish with your favorite main course.
