Let's Get Started

  1. In a large bowl, combine the ground pork, minced garlic, smoked paprika, ground cumin, dried oregano, ground coriander, cayenne pepper, salt, black pepper, vinegar, and vegetable oil.
  2. Mix well until all the ingredients are evenly incorporated.
  3. Cover the bowl with plastic wrap and refrigerate for at least 1 hour to allow the flavors to meld together.
  4. Heat a skillet over medium heat and add the chorizo mixture.
  5. Cook, breaking up the meat with a spoon, until browned and cooked through, about 10-12 minutes.
  6. Remove from heat and let it cool slightly before serving.
  7. Serve the Mexican chorizo in tacos, burritos, or as a topping for nachos.
