Mercimek Corbasi
Mercimek Çorbası, or Turkish Red Lentil Soup, is a hearty and delicious soup made with red lentils, carrots, potatoes, and spices. It's a popular dish in Turkey, especially during the cold winter months.
Ingredients - Serves 4
- Lemon wedges - For serving
- Olive oil - 2 tablespoons
- Salt and pepper - To taste
- Paprika - 1/2 teaspoon
- Cumin - 1 teaspoon
- Vegetable broth - 4 cups
- Garlic - 2 cloves, minced
- Onion - 1, chopped
- Potato - 1, chopped
- Carrot - 1, chopped
- Red lentils - 1 cup
Let's Get Started
- Rinse the lentils under cold water and set aside.
- Heat the olive oil in a large pot over medium heat. Add the onion, carrot, and potato and cook until the vegetables are softened, about 5 minutes.
- Add the garlic, cumin, and paprika and cook for another minute.
- Add the lentils and vegetable broth to the pot. Bring to a boil, then reduce the heat and simmer until the lentils are tender, about 20 minutes.
- Use an immersion blender to puree the soup until smooth. If you don't have an immersion blender, you can transfer the soup to a regular blender in batches and puree until smooth.
- Season the soup with salt and pepper to taste. Serve hot with lemon wedges on the side.
