Let's Get Started

  1. Rinse the lentils under cold water and set aside.
  2. Heat the olive oil in a large pot over medium heat. Add the onion, carrot, and potato and cook until the vegetables are softened, about 5 minutes.
  3. Add the garlic, cumin, and paprika and cook for another minute.
  4. Add the lentils and vegetable broth to the pot. Bring to a boil, then reduce the heat and simmer until the lentils are tender, about 20 minutes.
  5. Use an immersion blender to puree the soup until smooth. If you don't have an immersion blender, you can transfer the soup to a regular blender in batches and puree until smooth.
  6. Season the soup with salt and pepper to taste. Serve hot with lemon wedges on the side.
