Mee Rubus
Mee Rubus is a popular noodle dish in Malaysia and Singapore. It's a spicy noodle soup with a sweet and sour taste, made from a base of shrimp paste, chili, and tamarind juice.
Ingredients - Serves 4
- Sugar - To taste
- Salt - To taste
- Shrimp paste - 1 tablespoon
- Chili paste - 2 tablespoons
- Tamarind juice - 2 cups
- Potatoes - 2, boiled and mashed
- Bean sprouts - 200 grams
- Boiled eggs - 4
- Prawns - 200 grams
- Yellow noodles - 500 grams
Let's Get Started
- Boil the yellow noodles until they are soft, then drain and set aside.
- In a large pot, add the prawns, boiled eggs, bean sprouts, mashed potatoes, tamarind juice, chili paste, shrimp paste, salt, and sugar.
- Bring the mixture to a boil, then reduce the heat and let it simmer for about 30 minutes.
- Taste the soup and adjust the seasoning if necessary.
- To serve, place some noodles in a bowl, ladle the soup over the noodles, and top with a boiled egg.
