  1. Place the grated potatoes in a clean kitchen towel and squeeze out as much liquid as possible.
  2. Heat the olive oil in a large skillet over medium heat.
  3. Add the onion, bell pepper, and garlic and cook until softened, about 5 minutes.

  5. Flip the hashbrowns and cook on the other side until golden and crispy, about 10 minutes.
  6. Add the spinach and cook until wilted, about 2 minutes.
  7. Sprinkle the feta cheese and dill over the hashbrowns. Season with salt and pepper.
  8. Serve the hashbrowns hot, garnished with extra dill if desired.
