Mediterranean Hashbrowns
A delicious and hearty breakfast dish with a Mediterranean twist. These hashbrowns are packed with flavor from fresh herbs, feta cheese, and a variety of colorful vegetables.
Ingredients - Serves 4
- Salt and pepper - To taste
- Fresh dill - 2 tablespoons, chopped
- Feta cheese - 1/2 cup, crumbled
- Spinach - 2 cups
- Garlic - 2 cloves, minced
- Red bell pepper - 1, diced
- Red onion - 1, diced
- Olive oil - 2 tablespoons
- Potatoes - 4 large, peeled and grated
Let's Get Started
- Place the grated potatoes in a clean kitchen towel and squeeze out as much liquid as possible.
- Heat the olive oil in a large skillet over medium heat.
- Add the onion, bell pepper, and garlic and cook until softened, about 5 minutes.
- Add the grated potatoes, spread them out in the pan, and press them down lightly with a spatula. Cook until golden and crispy, about 10 minutes.
- Flip the hashbrowns and cook on the other side until golden and crispy, about 10 minutes.
- Add the spinach and cook until wilted, about 2 minutes.
- Sprinkle the feta cheese and dill over the hashbrowns. Season with salt and pepper.
- Serve the hashbrowns hot, garnished with extra dill if desired.
