Matcha Green Tea Macarons
These delicate French pastries are infused with the unique flavor of matcha green tea and filled with a sweet white chocolate ganache.
Ingredients - Serves 24
- Heavy cream - 1/4 cup
- White chocolate - 4 ounces
- Granulated sugar - 1/4 cup
- Egg whites - 3 large
- Matcha green tea powder - 2 tablespoons
- Powdered sugar - 1 3/4 cups
- Almond flour - 1 cup
Let's Get Started
- Preheat the oven to 300°F and line two baking sheets with parchment paper.
- In a food processor, combine the almond flour, powdered sugar, and matcha powder. Process until fine.
- In a large bowl, beat the egg whites until soft peaks form. Gradually add the granulated sugar and continue beating until stiff peaks form.
- Fold the almond flour mixture into the egg whites until the batter is smooth and shiny.
- Transfer the batter to a piping bag and pipe small circles onto the prepared baking sheets.
- Let the macarons sit at room temperature for 30 minutes to develop a skin.
- Bake for 15 minutes, or until the macarons are set.
- While the macarons are cooling, make the ganache: Heat the heavy cream in a small saucepan until it just begins to simmer. Remove from heat and add the white chocolate. Stir until smooth.
- Once the macarons are cool, pipe a small amount of ganache onto one macaron and sandwich with another. Repeat with the remaining macarons.
