Marquesitas
Marquesitas are a popular street food in Mexico, particularly in the Yucatan Peninsula. They are similar to crepes, but are rolled up and often filled with sweet fillings like Nutella, cheese, or fruit.
Ingredients - Serves 4
- Edam cheese - As needed
- Nutella - As needed
- Butter - For greasing
- Salt - Pinch
- Vanilla extract - 1 teaspoon
- Granulated sugar - 1/4 cup
- Milk - 1 cup
- Eggs - 2
- All-purpose flour - 1 cup
Let's Get Started
- In a large bowl, combine the flour, eggs, milk, sugar, vanilla extract, and salt. Whisk until smooth.
- Heat a non-stick skillet over medium heat and lightly grease with butter.
- Pour a small amount of batter into the skillet and swirl to evenly coat the bottom of the skillet.
- Cook until the edges of the marquesita start to lift from the skillet, then flip and cook the other side.
- Spread a layer of Nutella on the marquesita and sprinkle with Edam cheese.
- Roll up the marquesita while it's still warm and serve immediately.
