Marinated Anchovies
This is a simple and delicious recipe for marinated anchovies, perfect as an appetizer or part of a tapas spread.
Ingredients - Serves 4
- Black pepper - To taste
- Salt - To taste
- Parsley - 1 bunch, chopped
- Garlic - 3 cloves, minced
- Extra virgin olive oil - 1/2 cup
- White wine vinegar - 1 cup
- Fresh anchovies - 500 grams
Let's Get Started
- Clean the anchovies by removing the heads and innards, then open them up and remove the central bone.
- Place the cleaned anchovies in a dish and cover with the white wine vinegar. Let them marinate for at least 2 hours in the refrigerator.
- Drain the anchovies and pat them dry with paper towels.
- Arrange the anchovies in a dish, layering them with the minced garlic and chopped parsley.
- Season with salt and pepper to taste, then cover with the extra virgin olive oil.
- Let the anchovies marinate in the refrigerator for at least 24 hours before serving.
