  1. Preheat the oven to 300°F.
  2. In a bowl, mix together the maple syrup, soy sauce, garlic, and ginger. Add the pork belly and marinate for at least 30 minutes.
  3. Place the pork belly in a roasting pan and pour over the marinade. Cover with foil and roast for 2.5 hours.
  4. While the pork is roasting, make the apple puree. Cut the apples into chunks and place in a saucepan with the lemon juice and a little water. Cook over medium heat until the apples are soft.
  5. Puree the apples in a blender or food processor until smooth. Stir in the butter and season with salt and pepper.
  6. Increase the oven temperature to 400°F. Remove the foil from the pork and roast for another 30 minutes, until the pork is caramelized and crispy.
  7. Serve the pork belly slices with a dollop of apple puree.
