  1. Preheat the oven to 325°F.
  2. In a mixing bowl, combine the graham cracker crumbs and melted butter. Press the mixture into the bottom of a 9-inch springform pan to form the crust.
  3. In a separate mixing bowl, beat the cream cheese until smooth. Add the maple syrup and vanilla extract, and mix until well combined.
  4. Add the eggs, one at a time, mixing well after each addition. Stir in the sour cream.
  5. Pour the cream cheese mixture over the crust in the springform pan.
  6. Bake for 55-60 minutes, or until the center is set and the top is lightly golden.
  7. Remove from the oven and let cool to room temperature. Refrigerate for at least 4 hours, or overnight, to allow the cheesecake to set.
  8. Before serving, remove the cheesecake from the springform pan and top with whipped cream. Drizzle with additional maple syrup.
  9. Slice and serve chilled. Enjoy!
