Lentil Loaf with a Maple Glaze

Ingredients - Serves 6
- Dijon mustard - 1 tablespoon
- Apple cider vinegar - 2 tablespoons
- Maple syrup - 1/4 cup
- Salt and pepper - To taste
- Eggs - 2
- Bread crumbs - 1 cup
- Celery - 1 stalk, finely chopped
- Carrot - 1, grated
- Garlic - 2 cloves, minced
- Onion - 1, finely chopped
- Green lentils - 1 cup, dry
Let's Get Started
- Preheat the oven to 375°F and lightly grease a loaf pan.
- Cook the lentils according to package instructions, then set aside to cool.
- In a large pan, sauté the onion, garlic, carrot, and celery until soft.
- In a large bowl, combine the cooked lentils, sautéed vegetables, bread crumbs, eggs, salt, and pepper. Mix until well combined.
- Press the mixture into the prepared loaf pan.
- In a small bowl, whisk together the maple syrup, apple cider vinegar, and Dijon mustard to make the glaze.
- Spread the glaze over the top of the lentil loaf.
- Bake for 45-50 minutes, or until the loaf is firm and the glaze is caramelized.
- Let the loaf cool for 10 minutes before slicing and serving.
