Lentil Loaf with a Maple Glaze

  1. Preheat the oven to 375°F and lightly grease a loaf pan.
  2. Cook the lentils according to package instructions, then set aside to cool.
  3. In a large pan, sauté the onion, garlic, carrot, and celery until soft.
  4. In a large bowl, combine the cooked lentils, sautéed vegetables, bread crumbs, eggs, salt, and pepper. Mix until well combined.
  5. Press the mixture into the prepared loaf pan.
  6. In a small bowl, whisk together the maple syrup, apple cider vinegar, and Dijon mustard to make the glaze.
  7. Spread the glaze over the top of the lentil loaf.
  8. Bake for 45-50 minutes, or until the loaf is firm and the glaze is caramelized.
  9. Let the loaf cool for 10 minutes before slicing and serving.
