Mantecol
Mantecol is a traditional Argentine peanut dessert made with peanuts, sugar, and butter.
Ingredients - Serves 12
- Salt - 1/4 teaspoon
- Vanilla extract - 1 teaspoon
- Butter - 1/2 cup, melted
- Sugar - 1 cup
- Peanuts - 2 cups, roasted and unsalted
Let's Get Started
- In a food processor, pulse the peanuts until finely ground.
- Add the sugar, melted butter, vanilla extract, and salt to the food processor. Process until well combined and the mixture starts to come together.
- Line a square baking dish with parchment paper.
- Transfer the mixture to the prepared baking dish and press it down firmly to create an even layer.
- Refrigerate for at least 2 hours, or until firm.
- Remove from the refrigerator and cut into squares or bars.
