Mango Sticky Rice
A delicious Thai dessert made with sticky rice, fresh mango, and coconut sauce.
Ingredients - Serves 4
- Fresh mint leaves - For garnish
- Sesame seeds - 1 tablespoon
- Ripe mangoes - 2, sliced
- Salt - 1/4 teaspoon
- Sugar - 1/4 cup
- Coconut milk - 1 cup
- Sticky rice - 1 cup
Let's Get Started
- Rinse the sticky rice under cold water until the water runs clear. Soak the rice in water for at least 4 hours or overnight.
- Drain the soaked rice and place it in a steamer basket lined with cheesecloth. Steam the rice over high heat for 20 minutes, or until it is tender and cooked through.
- While the rice is steaming, prepare the coconut sauce. In a small saucepan, combine the coconut milk, sugar, and salt. Heat over medium heat until the sugar is dissolved and the mixture is heated through. Remove from heat and set aside.
- Once the rice is cooked, transfer it to a bowl and pour half of the coconut sauce over it. Mix well to coat the rice with the sauce.
- To serve, place a portion of the sticky rice on a plate. Arrange the sliced mangoes on top of the rice. Drizzle with more coconut sauce and sprinkle with sesame seeds.
- Garnish with fresh mint leaves and serve warm or at room temperature.
