Mango and Coconut Milk Pudding
This refreshing and creamy mango and coconut milk pudding is a perfect tropical dessert.
Ingredients - Serves 6
- Fresh mint leaves - For garnish
- Vanilla extract - 1 teaspoon
- Water - 1/4 cup
- Gelatin - 1 tablespoon
- Condensed milk - 1/2 cup
- Coconut milk - 1 can (400ml)
- Ripe mangoes - 2, peeled and diced
Let's Get Started
- In a blender, puree the diced mangoes until smooth.
- In a saucepan, heat the coconut milk and condensed milk over medium heat until warm.
- In a separate small bowl, dissolve the gelatin in water and let it sit for 5 minutes.
- Add the dissolved gelatin and vanilla extract to the warm milk mixture, stirring until well combined.
- Remove the saucepan from heat and let the mixture cool for a few minutes.
- Pour the mango puree into the milk mixture and stir until well combined.
- Divide the mixture into individual serving glasses or bowls.
- Refrigerate for at least 2 hours, or until set.
- Garnish with fresh mint leaves before serving.
