Mango Macarons
These delicate and colorful Mango Macarons are filled with a rich mango buttercream. They are perfect for parties, afternoon tea or just to enjoy as a treat.
Ingredients - Serves 20
- Mango puree - 1/4 cup
- Unsalted butter - 1/2 cup
- Yellow gel food coloring - 2 drops
- Mango extract - 1/2 teaspoon
- Granulated sugar - 1/4 cup
- Egg whites - 3 large
- Powdered sugar - 1 3/4 cups
- Almond flour - 1 cup
Let's Get Started
- Preheat the oven to 300°F (150°C) and line two baking sheets with parchment paper.
- In a food processor, combine the almond flour and powdered sugar and process until fine.
- In a large bowl, beat the egg whites until soft peaks form. Gradually add the granulated sugar, beating until stiff peaks form.
- Add the mango extract and food coloring, and beat until combined.
- Fold in the almond flour mixture until the batter is smooth and shiny.
- Transfer the batter to a piping bag fitted with a round tip and pipe onto the prepared baking sheets.
- Bake for 20 minutes, or until the macarons are set and can be easily lifted from the parchment paper.
- While the macarons are cooling, make the mango buttercream: Beat the butter until creamy, then beat in the mango puree until smooth.
- Once the macarons are completely cool, pipe or spread the mango buttercream onto half of the macarons. Top with the remaining macarons to make sandwiches.
