  1. In a mixing bowl, combine the graham cracker crumbs and melted butter. Press the mixture into the bottom of a 9-inch springform pan to form the crust.
  2. In a separate mixing bowl, beat the cream cheese and sugar until smooth and creamy.
  3. Add the mango puree to the cream cheese mixture and mix until well combined.
  4. In a small microwave-safe bowl, sprinkle the gelatin over the water and let it sit for 5 minutes to bloom. Microwave for 10 seconds to dissolve the gelatin completely.
  5. Add the dissolved gelatin to the mango cream cheese mixture and mix well.
  6. In another mixing bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the mango cream cheese mixture.
  7. Pour the mixture over the prepared crust in the springform pan. Smooth the top with a spatula.
  8. Refrigerate the cheesecake for at least 4 hours, or until set.
  9. Before serving, garnish with mango slices and mint leaves.
