Mango Cheesecake
This creamy and refreshing mango cheesecake is the perfect dessert for mango lovers.
Ingredients - Serves 8
- Mint leaves - For garnish
- Mango slices - For garnish
- Water - 1/4 cup
- Gelatin - 1 tablespoon
- Heavy cream - 1 cup
- Mango puree - 1 cup
- Sugar - 1/2 cup
- Cream cheese - 16 oz
- Butter - 1/3 cup, melted
- Graham cracker crumbs - 1 1/2 cups
Let's Get Started
- In a mixing bowl, combine the graham cracker crumbs and melted butter. Press the mixture into the bottom of a 9-inch springform pan to form the crust.
- In a separate mixing bowl, beat the cream cheese and sugar until smooth and creamy.
- Add the mango puree to the cream cheese mixture and mix until well combined.
- In a small microwave-safe bowl, sprinkle the gelatin over the water and let it sit for 5 minutes to bloom. Microwave for 10 seconds to dissolve the gelatin completely.
- Add the dissolved gelatin to the mango cream cheese mixture and mix well.
- In another mixing bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the mango cream cheese mixture.
- Pour the mixture over the prepared crust in the springform pan. Smooth the top with a spatula.
- Refrigerate the cheesecake for at least 4 hours, or until set.
- Before serving, garnish with mango slices and mint leaves.
