Let's Get Started

  1. In a bowl, combine the minced garlic, salt, black pepper, and olive oil to make a paste.
  2. Rub the paste all over the tri-tip roast, ensuring it's well coated.
  3. Place the roast in a dish, pour the red wine over it, and add the sprigs of rosemary. Cover and let it marinate in the refrigerator for at least 2 hours.
  4. Preheat your oven to 180°C (350°F).
  5. Place the marinated roast on a roasting rack in a roasting pan.
  6. Roast in the preheated oven for about 1.5 hours, or until the internal temperature reaches 60°C (140°F) for medium-rare.
  7. Remove the roast from the oven and let it rest for 10 minutes before slicing and serving.
