- Tortillas - 8, warmed
- Fresh cilantro - 2 tablespoons, chopped

- Tomato - 1, diced
- Garlic - 2 cloves, minced
- Jalapeno - 1, seeded and minced
- Bell pepper - 1, chopped
- Onion - 1 medium, chopped
- Beef - 1 pound, shredded
Let's Get Started
- In a large skillet, heat some oil over medium heat.
- Add the chopped onion, bell pepper, jalapeno, and minced garlic. Cook until the vegetables are softened.
- Add the shredded beef, diced tomato, cumin, chili powder, salt, and pepper. Cook for a few minutes until the beef is heated through and well coated with the spices.
- In a separate bowl, beat the eggs with a pinch of salt and pepper.
- Push the beef mixture to one side of the skillet and pour the beaten eggs into the other side. Scramble the eggs until cooked to your liking.
