Macaroni Salad
A classic macaroni salad with a creamy dressing, perfect for picnics and BBQs.
Ingredients - Serves 8
- Salt and pepper - To taste
- Fresh parsley - 2 tablespoons, chopped
- Dill pickles - 1/4 cup, finely chopped
- Red bell pepper - 1/4 cup, finely chopped
- Celery - 1/4 cup, finely chopped
- Red onion - 1/4 cup, finely chopped
- Sugar - 1 tablespoon
- Apple cider vinegar - 1 tablespoon
- Dijon mustard - 2 tablespoons
- Mayonnaise - 1 cup
- Elbow macaroni - 2 cups
Let's Get Started
- Cook the macaroni according to package instructions. Drain and rinse with cold water.
- In a large bowl, whisk together the mayonnaise, Dijon mustard, apple cider vinegar, sugar, salt, and pepper.
- Add the cooked macaroni, red onion, celery, red bell pepper, dill pickles, and fresh parsley to the bowl. Mix well to combine.
- Taste and adjust the seasoning if needed.
- Cover and refrigerate for at least 1 hour before serving to allow the flavors to meld together.
