Lohikeitto
Lohikeitto is a traditional Finnish salmon soup made with fresh salmon, potatoes, and dill.
Ingredients - Serves 4
- Salt and pepper - To taste
- Heavy cream - 1/2 cup
- Fresh dill - 1/4 cup, chopped
- Fish stock - 4 cups
- Butter - 2 tablespoons
- Onion - 1 medium, finely chopped
- Potatoes - 4 medium, peeled and diced
- Salmon fillets - 400g
Let's Get Started
- In a large pot, melt the butter over medium heat.
- Add the chopped onion and sauté until translucent.
- Add the diced potatoes and fish stock to the pot.
- Bring the mixture to a boil, then reduce the heat and simmer for about 10 minutes, or until the potatoes are tender.
- Meanwhile, cut the salmon fillets into bite-sized pieces.
- Add the salmon and chopped dill to the pot and simmer for an additional 5 minutes, or until the salmon is cooked through.
- Stir in the heavy cream and season with salt and pepper to taste.
- Serve hot and garnish with additional fresh dill, if desired.
