Let's Get Started

  1. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
  2. Add the egg yolks and vanilla extract, and mix until well combined.
  3. In a separate bowl, whisk together the almond flour, all-purpose flour, and salt.
  4. Gradually add the dry ingredients to the butter mixture, mixing until a dough forms.
  5. Divide the dough in half and shape each half into a disk. Wrap in plastic wrap and refrigerate for at least 1 hour.
  6. Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.
  7. On a lightly floured surface, roll out one disk of dough to about 1/8-inch thickness.
  8. Using a round cookie cutter, cut out cookies and place them on the prepared baking sheets.
  9. Use a smaller cookie cutter to cut out the centers of half of the cookies.
  10. Bake the cookies for 10-12 minutes, or until the edges are lightly golden.
  11. Allow the cookies to cool completely on the baking sheets.
  12. Spread a teaspoon of raspberry jam on the solid cookies, then top with the cut-out cookies.
  13. Dust the cookies with powdered sugar before serving.
