Linguine with Zucchini and Mint
A refreshing and light pasta dish with a hint of mint and the crunch of zucchini.
Ingredients - Serves 4
- Parmesan cheese - 1/2 cup, grated
- Salt and pepper - To taste
- Fresh mint leaves - 1/2 cup, chopped
- Garlic - 2 cloves, minced
- Zucchini - 2 medium, thinly sliced
- Olive oil - 2 tablespoons
- Linguine - 1 pound
Let's Get Started
- Cook the linguine in a large pot of boiling salted water until al dente.
- While the pasta is cooking, heat the olive oil in a large skillet over medium heat.
- Add the zucchini and garlic and cook until the zucchini is tender, about 5 minutes.
- Drain the pasta, reserving 1 cup of the pasta water.
- Add the pasta, mint, salt, and pepper to the skillet and toss to combine.
- If the pasta is too dry, add some of the reserved pasta water.
- Serve the pasta with a sprinkle of Parmesan cheese on top.
