Linguine with Zucchini and Mint

Ingredients - Serves 4

Let's Get Started

  1. Cook the linguine in a large pot of boiling salted water until al dente.
  2. While the pasta is cooking, heat the olive oil in a large skillet over medium heat.
  3. Add the zucchini and garlic and cook until the zucchini is tender, about 5 minutes.
  4. Drain the pasta, reserving 1 cup of the pasta water.
  5. Add the pasta, mint, salt, and pepper to the skillet and toss to combine.
  6. If the pasta is too dry, add some of the reserved pasta water.
  7. Serve the pasta with a sprinkle of Parmesan cheese on top.
