Linguine with Tahini Sauce

Ingredients - Serves 4
- Parmesan cheese - 1/2 cup, grated
- Parsley - 1/4 cup, chopped
- Salt and pepper - To taste
- Olive oil - 2 tablespoons
- Lemon juice - 2 tablespoons
- Garlic - 2 cloves, minced
- Tahini - 1/2 cup
- Linguine - 1 pound
Let's Get Started
- Cook the linguine according to the package instructions until al dente. Drain and set aside, reserving some of the pasta water.
- In a blender or food processor, combine the tahini, garlic, lemon juice, olive oil, and salt and pepper. Blend until smooth, adding some of the reserved pasta water if needed to thin the sauce.
- Toss the cooked linguine with the tahini sauce until well coated.
- Serve the pasta topped with the chopped parsley and grated Parmesan cheese.
