Linguine with Scallops and Lemon Sauce

Ingredients - Serves 4
- Grated parmesan cheese - 1/2 cup
- Fresh parsley - 1/4 cup, chopped
- Salt and pepper - To taste
- Lemon zest - 1 tablespoon
- Lemon juice - 1/4 cup
- Garlic - 3 cloves, minced
- Olive oil - 2 tablespoons
- Scallops - 1 pound
- Linguine - 1 pound
Let's Get Started
- Cook the linguine according to the package instructions. Drain and set aside.
- Heat the olive oil in a large skillet over medium heat. Add the scallops and cook until golden, about 2 minutes per side. Remove from the skillet and set aside.
- In the same skillet, add the garlic and cook until fragrant, about 1 minute.
- Add the lemon juice, lemon zest, salt, and pepper. Bring to a simmer.
- Add the cooked linguine to the skillet and toss to coat in the sauce.
- Add the scallops back to the skillet and toss to combine.
- Serve the pasta with a sprinkle of fresh parsley and grated Parmesan cheese.
