Linguine with Mussels and Chorizo
A delicious combination of linguine pasta, mussels, and spicy chorizo sausage, all tossed in a flavorful tomato sauce.
Ingredients - Serves 4
- Salt and pepper - To taste
- Parsley - 1/4 cup, chopped
- Mussels - 2 pounds, cleaned and debearded
- Canned diced tomatoes - 1 can (14.5 ounces)
- White wine - 1 cup
- Red pepper flakes - 1/2 teaspoon
- Garlic - 3 cloves, minced
- Chorizo sausage - 1/2 pound, sliced
- Olive oil - 2 tablespoons
- Linguine - 1 pound
Let's Get Started
- Cook the linguine according to the package instructions until al dente. Drain and set aside.
- Heat the olive oil in a large skillet over medium heat. Add the chorizo and cook until browned, about 5 minutes.
- Add the garlic and red pepper flakes to the skillet and cook for another minute.
- Pour in the wine and diced tomatoes. Bring the mixture to a simmer.
- Add the mussels to the skillet. Cover and cook until the mussels have opened, about 5-7 minutes.
- Discard any mussels that did not open.
- Add the cooked linguine to the skillet and toss to combine with the sauce.
- Season with salt and pepper to taste.
- Garnish with the chopped parsley before serving.
