Linguine with Lamb and Mint Pesto

- Salt and pepper - To taste
- Olive oil - 1/4 cup
- Parmesan cheese - 1/2 cup, grated
- Garlic - 2 cloves
- Fresh mint leaves - 1 cup
- Ground lamb - 1 pound
- Linguine - 1 pound
Let's Get Started
- Cook the linguine according to the package instructions. Drain and set aside.
- While the pasta is cooking, heat a large skillet over medium heat. Add the ground lamb and cook until browned and cooked through. Remove from the skillet and set aside.
- In a food processor, combine the mint leaves, garlic, and Parmesan cheese. Pulse until finely chopped. With the motor running, slowly add the olive oil until the mixture forms a pesto.
- Return the skillet to the heat. Add the cooked lamb and the pesto, stirring to combine. Cook for 2-3 minutes, until heated through.
- Add the cooked linguine to the skillet and toss to combine with the lamb and pesto. Season with salt and pepper to taste.
- Serve the pasta hot, garnished with additional Parmesan cheese and mint leaves if desired.
