  1. Cook the linguine according to the package instructions. Drain and set aside.
  2. While the pasta is cooking, heat a large skillet over medium heat. Add the ground lamb and cook until browned and cooked through. Remove from the skillet and set aside.
  3. In a food processor, combine the mint leaves, garlic, and Parmesan cheese. Pulse until finely chopped. With the motor running, slowly add the olive oil until the mixture forms a pesto.
  4. Return the skillet to the heat. Add the cooked lamb and the pesto, stirring to combine. Cook for 2-3 minutes, until heated through.
  5. Add the cooked linguine to the skillet and toss to combine with the lamb and pesto. Season with salt and pepper to taste.
  6. Serve the pasta hot, garnished with additional Parmesan cheese and mint leaves if desired.
