Linguine with Anchovy Sauce

Ingredients - Serves 4
- Parmesan cheese - 1/2 cup, grated
- Parsley - 1/4 cup, chopped
- Red pepper flakes - 1/2 teaspoon
- Anchovy fillets - 8, chopped
- Garlic - 4 cloves, minced
- Olive oil - 1/4 cup
- Linguine - 1 pound
Let's Get Started
- Cook the linguine according to the package instructions until al dente. Drain, reserving 1 cup of the pasta water.
- While the pasta is cooking, heat the olive oil in a large skillet over medium heat.
- Add the garlic, anchovies, and red pepper flakes to the skillet. Cook, stirring frequently, until the anchovies have melted into the oil and the garlic is fragrant.
- Add the cooked linguine to the skillet, along with the reserved pasta water. Toss until the pasta is well coated in the sauce.
- Remove from heat and stir in the chopped parsley and grated Parmesan cheese.
- Serve immediately, with additional Parmesan cheese on the side if desired.
