Lexington Lamb Stew
A hearty and comforting stew made with tender lamb, vegetables, and a rich broth.
Ingredients - Serves 6
- Bay leaf - 1
- Thyme - 1 teaspoon, chopped
- Rosemary - 1 teaspoon, chopped
- Chicken broth - 4 cups
- Potatoes - 3 large, peeled and chopped
- Carrots - 3, peeled and chopped
- Garlic - 3 cloves, minced
- Onion - 1 large, chopped
- Olive oil - 2 tablespoons
- Salt and pepper - To taste
- Lamb shoulder - 1.5 pounds, cut into chunks
Let's Get Started
- Season the lamb with salt and pepper.
- Heat the olive oil in a large pot over medium-high heat. Add the lamb and cook until browned on all sides. Remove the lamb from the pot and set aside.
- In the same pot, add the onion and garlic and cook until softened.
- Add the carrots and potatoes and cook for a few more minutes.
- Return the lamb to the pot. Add the chicken broth, rosemary, thyme, and bay leaf.
- Bring the stew to a boil, then reduce the heat and let it simmer for about 2 hours, or until the lamb is tender.
