Lexington Lamb Stew

Let's Get Started

  1. Season the lamb with salt and pepper.
  2. Heat the olive oil in a large pot over medium-high heat. Add the lamb and cook until browned on all sides. Remove the lamb from the pot and set aside.
  3. In the same pot, add the onion and garlic and cook until softened.
  4. Add the carrots and potatoes and cook for a few more minutes.
  5. Return the lamb to the pot. Add the chicken broth, rosemary, thyme, and bay leaf.
  6. Bring the stew to a boil, then reduce the heat and let it simmer for about 2 hours, or until the lamb is tender.
