Lentil Soup with Sausage

Ingredients - Serves 6

Let's Get Started

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the sausage and cook until browned. Remove the sausage from the pot and set aside.
  3. In the same pot, add the onion, carrots, celery, and garlic. Cook until the vegetables are soft, about 5 minutes.
  4. Add the lentils, chicken broth, and tomato paste to the pot. Bring to a boil.
  5. Reduce the heat to low, cover the pot, and simmer for 45 minutes, or until the lentils are tender.
  6. Return the sausage to the pot and season with salt and pepper. Cook for an additional 15 minutes.
  7. Serve the soup hot.
