Lentil Soup with Sausage
A hearty and comforting soup made with lentils, sausage, and vegetables.
Ingredients - Serves 6
- Salt and pepper - To taste
- Tomato paste - 2 tablespoons
- Chicken broth - 6 cups
- Lentils - 1 cup
- Garlic - 3 cloves, minced
- Celery - 2 stalks, chopped
- Carrots - 2, chopped
- Onion - 1, chopped
- Italian sausage - 1 pound
- Olive oil - 2 tablespoons
Let's Get Started
- Heat the olive oil in a large pot over medium heat.
- Add the sausage and cook until browned. Remove the sausage from the pot and set aside.
- In the same pot, add the onion, carrots, celery, and garlic. Cook until the vegetables are soft, about 5 minutes.
- Add the lentils, chicken broth, and tomato paste to the pot. Bring to a boil.
- Reduce the heat to low, cover the pot, and simmer for 45 minutes, or until the lentils are tender.
- Return the sausage to the pot and season with salt and pepper. Cook for an additional 15 minutes.
- Serve the soup hot.
