Lentil Quinoa Salad

Ingredients - Serves 4

Let's Get Started

  1. Rinse the quinoa under cold water until the water runs clear. Bring 2 cups of water to a boil in a medium saucepan, add the quinoa, reduce the heat to low, cover, and simmer for 15 minutes, or until the quinoa is tender and the water is absorbed.
  2. Rinse the lentils and place them in a saucepan with 3 cups of water. Bring to a boil, then reduce the heat and simmer for 20 minutes, or until the lentils are tender. Drain and set aside.
  3. In a large bowl, combine the cooked quinoa, cooked lentils, diced bell pepper, cucumber, cherry tomatoes, and crumbled feta cheese.
  4. In a small bowl, whisk together the olive oil, lemon juice, minced garlic, salt, and pepper. Pour the dressing over the salad and toss to combine.
  5. Serve the salad immediately, or refrigerate for an hour to let the flavors meld together.
