Lentil Quinoa Salad
A hearty and healthy salad packed with protein-rich lentils and quinoa, fresh vegetables, and a tangy lemon dressing.
Ingredients - Serves 4
- Salt and pepper - To taste
- Garlic - 1 clove, minced
- Lemon juice - 2 tablespoons
- Olive oil - 2 tablespoons
- Feta cheese - 1/2 cup, crumbled
- Cherry tomatoes - 1 cup, halved
- Cucumber - 1, diced
- Red bell pepper - 1, diced
- Green lentils - 1 cup
- Quinoa - 1 cup
Let's Get Started
- Rinse the quinoa under cold water until the water runs clear. Bring 2 cups of water to a boil in a medium saucepan, add the quinoa, reduce the heat to low, cover, and simmer for 15 minutes, or until the quinoa is tender and the water is absorbed.
- Rinse the lentils and place them in a saucepan with 3 cups of water. Bring to a boil, then reduce the heat and simmer for 20 minutes, or until the lentils are tender. Drain and set aside.
- In a large bowl, combine the cooked quinoa, cooked lentils, diced bell pepper, cucumber, cherry tomatoes, and crumbled feta cheese.
- In a small bowl, whisk together the olive oil, lemon juice, minced garlic, salt, and pepper. Pour the dressing over the salad and toss to combine.
- Serve the salad immediately, or refrigerate for an hour to let the flavors meld together.
