Ingredients - Serves 6

Let's Get Started

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the onion and garlic and cook until the onion is soft, about 5 minutes.
  3. Add the carrots, beets, potatoes, and lentils and cook for another 5 minutes.
  4. Add the vegetable broth and bring to a boil.
  5. Reduce the heat to low, cover the pot, and simmer for 45 minutes, or until the vegetables and lentils are tender.
  6. Stir in the dill and season with salt and pepper.
  7. Serve the borscht hot, with a dollop of sour cream on top if desired.
