Lentil Borscht
A hearty, healthy, and delicious lentil borscht soup that's perfect for cold winter days.
Ingredients - Serves 6
- Salt and pepper - To taste
- Dill - 2 tablespoons, chopped
- Vegetable broth - 6 cups
- Lentils - 1 cup
- Potatoes - 2, peeled and chopped
- Beets - 2, peeled and chopped
- Carrots - 2, chopped
- Garlic - 2 cloves, minced
- Onion - 1, chopped
- Olive oil - 1 tablespoon
Let's Get Started
- Heat the olive oil in a large pot over medium heat.
- Add the onion and garlic and cook until the onion is soft, about 5 minutes.
- Add the carrots, beets, potatoes, and lentils and cook for another 5 minutes.
- Add the vegetable broth and bring to a boil.
- Reduce the heat to low, cover the pot, and simmer for 45 minutes, or until the vegetables and lentils are tender.
- Stir in the dill and season with salt and pepper.
- Serve the borscht hot, with a dollop of sour cream on top if desired.
