Lentil and Sweet Potato Chili
A hearty and healthy chili made with lentils and sweet potatoes. It's perfect for a cold day.
Ingredients - Serves 6
- Salt and pepper - To taste
- Cumin - 1 teaspoon
- Chili powder - 2 tablespoons
- Vegetable broth - 4 cups
- Diced tomatoes - 1 can
- Lentils - 1 cup
- Sweet potatoes - 2, peeled and diced
- Garlic - 2 cloves, minced
- Onion - 1, chopped
- Olive oil - 1 tablespoon
Let's Get Started
- Heat the olive oil in a large pot over medium heat.
- Add the onion and garlic and cook until the onion is soft, about 5 minutes.
- Add the sweet potatoes, lentils, diced tomatoes, vegetable broth, chili powder, cumin, salt, and pepper.
- Bring to a boil, then reduce the heat and simmer for 45 minutes, or until the lentils and sweet potatoes are tender.
