Lentil and Spinach Curry
A hearty and healthy vegan curry dish made with lentils and spinach. It's packed with nutrients and flavors.
Ingredients - Serves 4
- Salt and pepper - To taste
- Spinach - 2 cups, chopped
- Vegetable broth - 4 cups
- Red lentils - 1 cup
- Curry powder - 2 tablespoons
- Ginger - 1 tablespoon, grated
- Garlic - 2 cloves, minced
- Onion - 1 large, finely chopped
- Olive oil - 2 tablespoons
Let's Get Started
- Heat the olive oil in a large pot over medium heat.
- Add the onion, garlic, and ginger and cook until the onion is soft, about 5 minutes.
- Add the curry powder and cook for another minute.
- Add the lentils and vegetable broth. Bring to a boil, then reduce the heat and simmer for 20 minutes, or until the lentils are tender.
- Add the spinach and cook until wilted, about 5 minutes.
- Season with salt and pepper to taste.
- Serve the curry hot with rice or naan bread.
