Lentil and Mushroom Stew
A hearty and nutritious stew made with lentils, mushrooms, and a blend of aromatic spices.
Ingredients - Serves 4
- Salt and pepper - To taste
- Rosemary - 1 teaspoon
- Thyme - 1 teaspoon
- Vegetable broth - 4 cups
- Lentils - 1 cup, rinsed
- Mushrooms - 2 cups, sliced
- Celery - 2 stalks, chopped
- Carrots - 2, chopped
- Garlic - 2 cloves, minced
- Onions - 1 large, chopped
- Olive oil - 2 tablespoons
Let's Get Started
- Heat the olive oil in a large pot over medium heat.
- Add the onions, garlic, carrots, and celery and cook until the vegetables are soft, about 10 minutes.
- Add the mushrooms and cook until they release their liquid and start to brown, about 5 minutes.
- Add the lentils, vegetable broth, thyme, rosemary, salt, and pepper. Bring to a boil, then reduce the heat and simmer until the lentils are tender, about 30 minutes.
- Taste and adjust the seasoning if necessary. Serve hot.
