Lentil and Chorizo Stew

Ingredients - Serves 6
- Salt and pepper - To taste
- Paprika - 1 teaspoon
- Tomato paste - 2 tablespoons
- Chicken broth - 4 cups
- Garlic - 2 cloves, minced
- Carrot - 2, chopped
- Onion - 1 large, chopped
- Lentils - 1 cup, rinsed
- Chorizo - 200 grams, sliced
Let's Get Started
- Heat a large pot over medium heat and add the chorizo. Cook until browned and crispy, then remove from the pot and set aside.
- In the same pot, add the onion, carrot, and garlic. Cook until the vegetables are softened.
- Add the lentils, chicken broth, tomato paste, and paprika to the pot. Stir to combine.
- Bring the stew to a boil, then reduce the heat and let it simmer for about 45 minutes, or until the lentils are tender.
- Return the chorizo to the pot and season with salt and pepper. Let the stew cook for another 15 minutes.
- Serve the stew hot, with crusty bread on the side if desired.
