Let's Get Started

  1. Heat a large pot over medium heat and add the chorizo. Cook until browned and crispy, then remove from the pot and set aside.
  2. In the same pot, add the onion, carrot, and garlic. Cook until the vegetables are softened.
  3. Add the lentils, chicken broth, tomato paste, and paprika to the pot. Stir to combine.
  4. Bring the stew to a boil, then reduce the heat and let it simmer for about 45 minutes, or until the lentils are tender.
  5. Return the chorizo to the pot and season with salt and pepper. Let the stew cook for another 15 minutes.
  6. Serve the stew hot, with crusty bread on the side if desired.
