Lentil and Broccoli Rabe Soup
A hearty and nutritious soup made with lentils and broccoli rabe, perfect for a cold day.
Ingredients - Serves 4
- Salt and pepper - To taste
- Vegetable broth - 4 cups
- Broccoli rabe - 1 bunch, chopped
- Lentils - 1 cup
- Celery - 1 stalk, chopped
- Carrot - 1, chopped
- Garlic - 2 cloves, minced
- Onion - 1, chopped
- Olive oil - 2 tablespoons
Let's Get Started
- Heat the olive oil in a large pot over medium heat.
- Add the onion, garlic, carrot, and celery and cook until the vegetables are soft, about 5 minutes.
- Add the lentils and cook for another 2 minutes.
- Add the broccoli rabe and vegetable broth. Bring to a boil, then reduce the heat and simmer for 30 minutes, or until the lentils are tender.
- Season with salt and pepper to taste.
- Serve hot.
