Lentejas Con Chorizo
A hearty and traditional Spanish lentil and chorizo stew.
Ingredients - Serves 4
- Salt and pepper - To taste
- Olive oil - 2 tablespoons
- Bay leaf - 1
- Paprika - 1 teaspoon
- Potato - 1, chopped
- Carrot - 1, chopped
- Garlic - 2 cloves, minced
- Onion - 1, chopped
- Chorizo - 200 grams, sliced
- Lentils - 1 cup
Let's Get Started
- Heat the olive oil in a large pot over medium heat.
- Add the chorizo and cook until browned, then remove and set aside.
- In the same pot, add the onion, garlic, carrot, and potato. Cook until the vegetables are softened.
- Add the lentils, paprika, bay leaf, and enough water to cover the ingredients. Bring to a boil.
- Reduce the heat to low, cover the pot, and simmer for 40 minutes, or until the lentils are tender.
- Return the chorizo to the pot and season with salt and pepper. Cook for another 10 minutes.
- Serve the lentejas con chorizo hot, with crusty bread on the side if desired.
