Lentejas Con Chorizo

Ingredients - Serves 4

Let's Get Started

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the chorizo and cook until browned, then remove and set aside.
  3. In the same pot, add the onion, garlic, carrot, and potato. Cook until the vegetables are softened.
  4. Add the lentils, paprika, bay leaf, and enough water to cover the ingredients. Bring to a boil.
  5. Reduce the heat to low, cover the pot, and simmer for 40 minutes, or until the lentils are tender.
  6. Return the chorizo to the pot and season with salt and pepper. Cook for another 10 minutes.
  7. Serve the lentejas con chorizo hot, with crusty bread on the side if desired.
