  1. Heat the olive oil in a large pot over medium heat.
  2. Add the chorizo and cook until browned, then remove and set aside.
  3. In the same pot, add the onion, garlic, carrot, and bell pepper. Cook until softened.
  4. Add the tomato, paprika, bay leaf, salt, and pepper. Cook for a few minutes until the tomato is softened.
  5. Add the lentils and enough water to cover. Bring to a boil, then reduce the heat and simmer for 30 minutes.
  6. Return the chorizo to the pot and continue to simmer for another 30 minutes, until the lentils are tender.
  7. Adjust the seasoning if necessary, then serve.
