- Olive oil - 2 tablespoons
- Salt and pepper - To taste
- Bay leaf - 1
- Paprika - 1 teaspoon
- Tomato - 1, chopped
- Red bell pepper - 1, chopped
- Carrot - 1, chopped
- Garlic - 2 cloves, minced
- Onion - 1, chopped
- Chorizo sausage - 1, sliced
- Lentils - 1 cup
Let's Get Started
- Heat the olive oil in a large pot over medium heat.
- Add the chorizo and cook until browned, then remove and set aside.
- In the same pot, add the onion, garlic, carrot, and bell pepper. Cook until softened.
- Add the tomato, paprika, bay leaf, salt, and pepper. Cook for a few minutes until the tomato is softened.
- Add the lentils and enough water to cover. Bring to a boil, then reduce the heat and simmer for 30 minutes.
- Return the chorizo to the pot and continue to simmer for another 30 minutes, until the lentils are tender.
- Adjust the seasoning if necessary, then serve.
