Lentejas
Lentejas, or Spanish Lentil Soup, is a hearty and comforting dish made with lentils, vegetables, and chorizo.
Ingredients - Serves 4
- Salt and pepper - To taste
- Water - 4 cups
- Bay leaf - 1
- Paprika - 1 teaspoon
- Lentils - 1 cup
- Chorizo - 100g, sliced
- Garlic - 2 cloves, minced
- Carrot - 1, chopped
- Onion - 1, chopped
- Olive oil - 2 tablespoons
Let's Get Started
- Heat the olive oil in a large pot over medium heat.
- Add the onion, carrot, and garlic and cook until the vegetables are soft, about 5 minutes.
- Add the chorizo and cook until browned, about 5 minutes.
- Add the lentils, paprika, bay leaf, water, salt, and pepper. Bring to a boil.
- Reduce the heat to low, cover, and simmer for 45 minutes, or until the lentils are tender.
- Taste and adjust the seasoning if necessary. Serve hot.
