Lemon Barley Water

Let's Get Started

  1. Rinse the barley under cold water until the water runs clear.
  2. Place the barley in a large pot and add the water. Bring to a boil, then reduce the heat and simmer for 45 minutes, or until the barley is tender.
  3. Strain the barley, reserving the cooking water. Set the barley aside for another use.
  4. Add the lemon juice, sugar, and lemon zest to the barley water. Stir until the sugar is dissolved.
  5. Chill in the refrigerator for at least 1 hour before serving.
