Lemon and Asparagus Linguine

Ingredients - Serves 4
- Parmesan cheese - 1/2 cup, grated
- Salt and pepper - To taste
- Lemon juice - 2 tablespoons
- Lemon zest - 1 tablespoon
- Garlic - 2 cloves, minced
- Olive oil - 2 tablespoons
- Asparagus - 1 bunch, trimmed and cut into 1-inch pieces
- Linguine - 8 ounces
Let's Get Started
- Cook the linguine according to the package instructions. Add the asparagus for the last 3 minutes of cooking. Drain and set aside.
- Heat the olive oil in a large skillet over medium heat. Add the garlic and cook until fragrant, about 1 minute.
- Add the cooked linguine and asparagus to the skillet. Stir in the lemon zest, lemon juice, salt, and pepper.
- Cook for 2-3 minutes, until everything is well combined and heated through.
- Remove from heat and stir in the grated Parmesan cheese.
