Kiwi and White Chocolate Truffles

Let's Get Started

  1. Place the diced kiwi in a blender or food processor and blend until smooth.
  2. In a heatproof bowl, combine the chopped white chocolate, heavy cream, and butter.
  3. Place the bowl over a pot of simmering water, making sure the bottom of the bowl does not touch the water.
  4. Stir the mixture until the chocolate and butter are melted and the mixture is smooth.
  5. Remove the bowl from heat and stir in the vanilla extract and powdered sugar.
  6. Add the kiwi puree to the white chocolate mixture and mix well.
  7. Cover the bowl with plastic wrap and refrigerate for at least 2 hours, or until the mixture is firm.
  8. Using a spoon or a melon baller, scoop out small portions of the mixture and roll them into balls.
  9. Roll the truffles in desiccated coconut until coated.
  10. Place the truffles on a baking sheet lined with parchment paper and refrigerate for another 30 minutes to set.
  11. Serve the kiwi and white chocolate truffles chilled and enjoy!
