Lamb Soup
This hearty lamb soup is made with tender lamb, vegetables, and aromatic spices.
Ingredients - Serves 6
- Olive oil - 2 tablespoons
- Salt and pepper - To taste
- Thyme - 1 teaspoon, chopped
- Rosemary - 1 teaspoon, chopped
- Bay leaves - 2
- Beef broth - 6 cups
- Tomatoes - 2 medium, chopped
- Potatoes - 2 medium, diced
- Garlic - 3 cloves, minced
- Celery - 2 stalks, sliced
- Carrots - 2 medium, sliced
- Onion - 1 large, chopped
- Lamb shoulder - 1.5 pounds, cubed
Let's Get Started
- Heat olive oil in a large pot over medium heat.
- Add the lamb cubes and cook until browned on all sides.
- Add the chopped onion, sliced carrots, sliced celery, and minced garlic. Cook for 5 minutes, until vegetables are slightly softened.
- Add the diced potatoes, chopped tomatoes, beef broth, bay leaves, rosemary, thyme, salt, and pepper. Bring to a boil.
- Reduce heat to low, cover the pot, and simmer for 1.5 to 2 hours, until the lamb is tender.
- Remove the bay leaves and adjust seasoning if needed.
- Serve hot and enjoy!
