Ingredients - Serves 6

Let's Get Started

  1. Heat olive oil in a large pot over medium heat.
  2. Add the lamb cubes and cook until browned on all sides.
  3. Add the chopped onion, sliced carrots, sliced celery, and minced garlic. Cook for 5 minutes, until vegetables are slightly softened.
  4. Add the diced potatoes, chopped tomatoes, beef broth, bay leaves, rosemary, thyme, salt, and pepper. Bring to a boil.
  5. Reduce heat to low, cover the pot, and simmer for 1.5 to 2 hours, until the lamb is tender.
  6. Remove the bay leaves and adjust seasoning if needed.
  7. Serve hot and enjoy!
