Lamb Roast
A succulent roast lamb seasoned with rosemary, garlic, and lemon.

- Salt and pepper - To taste
- Olive oil - 2 tablespoons
- Lemon zest - 1 tablespoon
- Fresh rosemary - 2 tablespoons, chopped
- Garlic cloves - 6, minced
- Leg of lamb - 1 (5 to 7 pounds)
Let's Get Started
- Preheat your oven to 325°F (165°C).
- In a small bowl, combine the minced garlic, chopped rosemary, lemon zest, olive oil, salt, and pepper.
- Rub the mixture all over the leg of lamb, making sure to get into any nooks and crannies.
- Place the lamb on a rack in a roasting pan, fat side up.
- Roast in the preheated oven for about 1.5 hours, or until the internal temperature reaches 145°F (63°C) for medium-rare.
- Remove the lamb from the oven and let it rest for 15 minutes before carving.
