Let's Get Started

  1. Preheat your oven to 325°F (165°C).
  2. In a small bowl, combine the minced garlic, chopped rosemary, lemon zest, olive oil, salt, and pepper.
  3. Rub the mixture all over the leg of lamb, making sure to get into any nooks and crannies.
  4. Place the lamb on a rack in a roasting pan, fat side up.
  5. Roast in the preheated oven for about 1.5 hours, or until the internal temperature reaches 145°F (63°C) for medium-rare.
  6. Remove the lamb from the oven and let it rest for 15 minutes before carving.
