Lamb Madras
A spicy, flavorful Indian curry dish made with tender lamb and a blend of aromatic spices.
Ingredients - Serves 4
- Fresh coriander - A handful, chopped
- Salt - To taste
- Lamb stock - 500 ml
- Tomatoes - 400 grams, chopped
- Madras curry powder - 2 tablespoons
- Ginger - 1 tablespoon, grated
- Garlic - 2 cloves, minced
- Onions - 2, finely chopped
- Vegetable oil - 2 tablespoons
- Lamb - 500 grams, diced
Let's Get Started
- Heat the oil in a large pan over medium heat.
- Add the onions and cook until they are soft and golden.
- Add the garlic and ginger and cook for another minute.
- Add the lamb and cook until it is browned on all sides.
- Add the Madras curry powder and cook for a minute, stirring to coat the lamb in the spices.
- Add the tomatoes, lamb stock, and salt. Bring to a boil, then reduce the heat and simmer for 45 minutes, or until the lamb is tender.
- Stir in the fresh coriander and serve the Lamb Madras with rice or naan bread.
