  1. Heat the oil in a large pan over medium heat.
  2. Add the onions and cook until they are soft and golden.

  4. Add the lamb and cook until it is browned on all sides.
  5. Add the Madras curry powder and cook for a minute, stirring to coat the lamb in the spices.

  7. Stir in the fresh coriander and serve the Lamb Madras with rice or naan bread.
