Let's Get Started

  1. Heat the olive oil in a large pot over medium heat. Add the ground lamb and cook until browned. Remove the lamb from the pot and set aside.
  2. In the same pot, add the onion, carrot, celery, and garlic. Cook until the vegetables are soft.
  3. Add the tomato paste and stir to combine. Cook for 2 minutes.
  4. Add the red wine and scrape the bottom of the pot to deglaze.
  5. Add the crushed tomatoes, bay leaves, salt, and pepper. Return the lamb to the pot and stir to combine.
  6. Reduce the heat to low, cover the pot, and simmer for 2 hours.
  7. Serve the bolognese sauce over cooked pasta and top with grated Parmesan cheese.
