Lamb and Barley Soup
A hearty and comforting soup made with tender lamb, nutritious barley, and a variety of vegetables.

- Salt and pepper - To taste
- Bay leaf - 1
- Beef broth - 6 cups
- Garlic - 2 cloves, minced
- Onion - 1, chopped
- Celery - 2 stalks, chopped
- Carrots - 2, chopped
- Barley - 1 cup
- Lamb - 1 pound, cut into cubes
Let's Get Started
- In a large pot, brown the lamb on all sides. Remove from the pot and set aside.
- In the same pot, add the carrots, celery, onion, and garlic. Cook until the vegetables are softened.
- Return the lamb to the pot. Add the barley, beef broth, bay leaf, salt, and pepper.
- Bring the soup to a boil, then reduce the heat and let it simmer for about 2 hours, or until the lamb is tender and the barley is cooked.
